Tater's Biscotti

 

Tater always makes a double batch, but here's a single.

Heat that oven to 323 degrees.

Mix you up

two and a third cups of flour,
one cup of sugar,
three eggs,
3 tablespoons of butter,
zest of a lemon,
1 teaspoons bakin powder,
1/3 teaspoon a bakin soda,
1/8 teaspoon a salt
3 teaspoons of vaniller.


Mix it all up real good, then add

a cup of chopped dried fruit like apricots or sweet cranberries,
a cup of almonds.


Oil up a cookie sheet, flour your hands and roll that dough into four snakes. Lay them snakes across that cookie sheet and flatten em just a little.

Put them in the oven for 20-25 minutes. They should be golden brown.

Take em out and let em cool a minute.

Cut at an angle, makin each cookie about 3/4 to 1 inch wide.

Lay them cut side up on the cookie sheet, turn off the oven and put them back in there for 5 to 10 minutes, until that cut side is a little dry.
