[[File:BaconLemon.jpg]] Bacon lemon rissotto 3 Tbsp olive oil 1 onion, chopped 1 lb. bacon 2 cups arborio rice 1/2 cup lemon juice 4 cups chicken stock 3/4 cup grated hard cheese, preferably Parmesan Mix up that lemon juice and stock in a small covered pan and bring it to a simmer. Cook up your bacon real crisp, but not burnt anywheres and chop it up. You burn it, you eat it now. Go on. It'll ruin that rice. Cook that onion in 3 Tbsp bacon fat, and take it outta the pan. Sautee the rice in the olive oil until it just begins to want to think about turnin brown, but don't let it get that far. Add a cup of the hot lemon stock to the rice, and stir it in good. Get someone old and senile or young and compliant to stir it, and keep stirrin it. When that rice sucked up that chicken stock, pour in another cup. Keep granny stirrin it. Do that over and over until you ain't got no more chicken lemon stock Take it off the heat and stir in the cheese, then plop it right on the plates. That's good eatin!
