Bite-You-Back Squash Soup
1 lb Winter squash, like Kuri, Acorn, Butternut
1 can evaporated milk (not sweetened!)
3 cups chicken or vegetable stock, salted
1 tsp wasabi powder
1 tbs soy sauce
1 tsp hot red pepper powder (chipotle is best)
2 tsp olive oil
Cut that squash in half and scoop out the seeds. Spread one teaspoon of the oil on a bakin sheet and set the squash cut side down on there. Set that oven to 325, and bake them halves for an hour.
While the squash is cooling, take the guts out the seeds. Mix the soy sauce and the red pepper and another tsp of olive oil in there with the seeds. Put the seeds on the bakin sheet where the squash was and bake at 300 for an hour.
While them seeds is bakin, scoop the squash flesh out the shell, and put it in a bowl. Add the can of milk and the broth and the wasabi powder and mush it all together real good. Tater uses one of them hand blenders.
Heat the soup up, and if it gets too thick, add more broth. Take the seeds out the oven and break up them little clumps.
Spoon you a bowl of soup and sprinkle some them seeds on there.
